Ingredients

  • Ingredients:

    • Spring Roll Wrappers: 8-10 rice paper wrappers (available at Asian grocery stores)
    • Julienned Vegetables:
      • 1 cup carrots
      • 1 cup bell peppers (red, yellow, or green)
      • 1 cup cucumber
      • 1 cup red cabbage
    • Fresh Herbs:
      • 1/2 cup fresh basil leaves
      • 1/2 cup fresh cilantro leaves
      • 1/2 cup fresh mint leaves
    • Leafy Greens: A handful of baby spinach or lettuce leaves
    • Cooked Noodles (optional): 1/2 cup rice noodles or vermicelli, cooked and cooled
    • Dipping Sauce:
      • 1/4 cup soy sauce
      • 1/4 cup rice vinegar
      • 1 tablespoon honey or maple syrup
      • 1 teaspoon sesame oil
      • 1 clove garlic, minced
      • 1 teaspoon grated ginger
      • 1 tablespoon sesame seeds (optional)

Instructions

Step 1

Prepare the Vegetables:

  • Wash and julienne the carrots, bell peppers, cucumber, and red cabbage.
  • Set aside.

 

Step 2

Prepare the Herbs and Greens:

  • Rinse and pat dry the basil, cilantro, and mint leaves.
  • Wash and dry the baby spinach or lettuce leaves.

    Step 3

    Cook Noodles (if using):

    • Cook the rice noodles or vermicelli according to package instructions. Drain and let cool.

    Step 4

    Prepare the Spring Roll Wrappers:

    • Fill a large bowl with warm water.
    • Dip one rice paper wrapper into the water for about 10-15 seconds until it softens, then carefully lay it flat on a clean surface or a damp towel.

    Step 5

    Assemble the Spring Rolls:

    • In the center of the softened wrapper, layer a small handful of baby spinach or lettuce.
    • Add a few pieces of each vegetable, some noodles (if using), and a few fresh herb leaves.
    • Fold the sides of the wrapper over the filling, then roll from the bottom up, tucking in the edges as you go, to create a tight roll.

      Step 5

      Prepare the Dipping Sauce:

      • In a small bowl, whisk together soy sauce, rice vinegar, honey (or maple syrup), sesame oil, minced garlic, and grated ginger.
      • Add sesame seeds if desired.

          Step 6

          Serve:

          • Arrange the spring rolls on a platter and serve with the dipping sauce.
